Sesame Orzo Salad

Amount Measure Ingredient -- Preparation Method

16 ounces pkg orzo

1 cup tomatoes -- chopped

1/4 cup artichoke hearts, preferably marinated -- chopped

1/4 cup chopped, oil-packed sun-dried tomatoes

10 black olives -- pitted and quartered

1 teaspoon each: dried thyme, oregano, and basil

Dressing:

1/4 cup light or regular soy sauce

1/4 cup balsamic vinegar

3 tablespoons dark sesame oil

1 tablespoon sesame seeds

 

Bring a large pot of water to a boil and cook orzo according to package

directions. Drain, rinse with cool water and set aside.

 

In a large mixing bowl, combine tomatoes, artichokes, sun-dried tomatoes,

olives, thyme, oregano, basil, and orzo.

 

In a small bowl whisk together dressing ingredients. Pour dressing over salad

and toss to mix.
