Guest guest Posted August 13, 2001 Report Share Posted August 13, 2001 * Exported from MasterCook * Roasted Garlic-Yam Dip Recipe By :Veggie Life, Autumn 2001, Vesanto Melina, MS, RD Serving Size : 0 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cloves unpeeled garlic 3 small yams (abaout 1-1/2 pounds) 1 1/2 teaspoons lemon juice 1 teaspoon nutritional yeast 1/2 teaspoon oregano salt and pepper, to taste 1 tablespoon chopped parsley to garnish Preheat oven to 300 degrees. Wrap garlic in foil and place on a nonstick baking sheet, along with yams. Roast until tender, about 35 minutes. Set aside until cool enough to handle. Peel yams and press garlic from skins. In a food processor, puree garlic and yams with lemon juice, yeast, oregano, salt, and pepper. Serve sprinkled with parsley.
