Perfect Short-Grain Rice, Every Time

Amount Measure Ingredient -- Preparation Method

1 cup short grain rice (brown, pearl, or sushi),

well rinsed

Water:

1 cup plus 2 tablespoons water for sushi

rice or

1 1/4 cups for pearl rice, or

1 2/3 cups for short-grain brown rice

 

In a small heavy-bottomed saucepan, combine rice and water. Cover and let stand

for 10 minutes.

 

Bring to a boil over high heat. When steam begins to escape from under the lid,

reduce heat to simmer, and continue cooking, 5 minutes for sushi, 8 to 10

minutes for pearl, 35 to 40 minutes for brown. Do not lift the lid.

 

Turn off heat and let stand, covered, for 10 to 12 minutes.
