Cover and let stand for 10 minutes. Bring to a boil over high heat. When steam begins to escape from under the lid, reduce heat to simmer, and continue cooking, 5 minutes for sushi, 8 to 10 minutes for pearl, 35 to 40 minutes for brown. Do not lift the lid.
