Guest guest Posted August 13, 2001 Report Share Posted August 13, 2001 * Exported from MasterCook * Deep Chocolate Cake with Cashew Frosting Recipe By :Veggie Life, Autumn 2001, Don Buscher, MS Serving Size : 12 Preparation Time :0:00 Categories : Desserts/Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 1/2 cup maple syrup 1/4 cup prune puree 1/4 cup canola oil 2 teaspoons vanilla 2 cups whole-wheat pastry flour 1 cup unbleached white flour 1 cup cocoa powder 1 cup sugar 4 teaspoons baking powder 1 1/2 teaspoons baking soda 1/2 teaspoon salt cooking spray or oil Frosting: 2/3 cup raw cashews 1/3 cup water 12 ounces lite silken tofu, extra-firm 2/3 cup powdered sugar 1/2 cup dairy-free chocolate chips, melted 1 teaspoon vanilla Preheat oven to 350 degrees and lightly spray or oil 2 8-inch round cake pans. In a large mixing bowl, stir together water, syrup, prune puree, oil, and vanilla. In a separate bowl, whisk together flours, cocoa, sugar, baking powder, baking soda, and salt. Add dry ingredients to wet mixture. With an electric mixer on medium speed, beat for 3 minutes, until fluffy. Pour batter into prepared cake pans. Bake 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Remove from oven and cool 5 minutes in the pans. Invert cakes onto cooling rack, remove pans, and allow to cool completely. In a food processor or blender, puree cashews and water until creamy. Add tofu, sugar, melted chocolate, and vanilla, and blend until smooth. Chill to spreading consistency, about 1 hour. Use a serrated knife to split each cake layer into 2 thin rounds. Place one round on a serving plate and spread with a thin layer of frosting. Place another round on top and spread with frosting. Repeat with remaining rounds.
