Chocolate Nut Bars

Amount Measure Ingredient -- Preparation Method

1/2 cup nut butter

1/2 cup rice syrup, barley malt syrup, or maple

syrup

2 1/2 ounces unsweetened baking chocolate

1/2 teaspoon vanilla

2 cups ready to eat cereal (such as puffed rice,

soy flakes, or nutty rice cereals)

1/2 cup chopped unsalted nuts

2 tablespoons oat bran or wheat germ

cooking spray or oil

 

Lightly spray or oil an 8-inch square baking dish. In a large saucepan over

medium heat, combine nut butter and syrup. When warm enough to mix easily,

reduce heat and simmer for 2 minutes, stirring constantly. Add chocolate,

stirring until melted. Remove from heat and stir in vanilla.

 

Stir in cereal, nuts, and bran or wheat germ. Press mixture into prepared dish

and refrigerate until firm, about 1 hour.
