Guest guest Posted August 13, 2001 Report Share Posted August 13, 2001 * Exported from MasterCook * Caramelized Onion Quiche Recipe By :Veggie Life, Autumn 2001, Mark Berlin Serving Size : 8 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium onions, thinly sliced 2 tablespoons olive oil 1/4 cup masa harina 3/4 cup soy milk 1 pound firm tofu, pressed, cut into 1/2 " cubes 2 tablespoons chopped fresh herbs of choice 1 tablespoon miso 1 sheet frozen pastry dough or 1 9 " prepared pie crust cooking spray In a large skillet over medium heat, saute onions in 1 tablespoon oil for 1 hour, stirring frequently, until very soft and browned. Preheat oven to 375 degrees. In a small saucepan over medium-high heat, combine masa harina and remaining oil, stirring mixture until lightly toasted, 2 to 3 minutes. Stir in soy milk and cook, stirring constantly, until mixture thickens, about 5 minutes. Remove from heat. Stir in onions, tofu, herbs, and miso. Set aside. If using frozen pastry sheet: Lightly spray a 10-inch quiche dish. On a lightly floured work surface or between sheets of plastic, roll out pastry dough and press into prepared dish.
