I have discovered I'm even lazier than I thought, too, so much of what I eat depends upon what I buy that weekend at the store. For example, I've started making dips. Not necessarily for snacking, because I don't like that, but for protein. I made a cottage cheese/tofu/dill thing that I spread on whole grain bread (I get 1/4 cup at a time) and had for lunch a few days this week. I made a fantastic hummus, spinach dip, a bleu cheese dip and a " crab " dip, with which I did the same thing the weeks before. Although I really try to limit the dairy, I use cottage cheese (nonfat) because I like the texture, and purée the tofu before I blend it in. I add a little nonfat sour cream or nonfat plain soy yogurt for smoothing effects, spices, etc. It gets in the protein into me pretty easily. I bought some of those cheapy Glad containers that hold about a cup, and measured 1/2 cup portions into them so I didn't have to worry about licking the spoon, because that can really add up. <g> I experiment with the tofu, trying to use as much of that as I can, before adding the dairy. It turns out pretty deliciously. Naturally, you can do the dips with some nonfat crackers or raw veggies, but I just eat 'em with a spoon or on the bread. I love cabbage. In any way, shape or form. I, being lazy, bought bok choy, green cabbage and Chinese cabbage. I chopped them up and put them into a huge plastic bag in the fridge. At night, I've been sautéing an onion in white wine and soy sauce, adding some more water and steaming the cabbage. I've been adding bacon bits (look for the ones that are soy protein) for a little flavor dash, and lots of cracked black pepper. A cut up peach or apple, another scoop of dip and I'm done! I bought a bunch of veggie burgers, which I love. I took the time to take them out of the package and to put them into baggies. I took buns and individually bagged them and froze them, too. By the time I get to work, the bun is thawing and at lunch I can toss this into the microwave. That's a protein Exchange and a starch Exchange. And pretty tasty, too! Bleu cheese dip on the burger was great! I have been measuring my wonderful, favorite pasta, so I also might have a 1/2 cup of uncooked pasta (cooks up to 1 cup) with 1/4 cup tomato sauce on it. I throw in capers, and dice up 4 calmatta olives (either brine cured or regular) for that tangy flavor. Some fruit or dip again. Last night I had a package of Brussels sprouts (cabbage again) with 2 table of bleu cheese crumbles melted over it. Almost every meal has a piece of fruit with it, or 17 grapes. This gets them in, and I don't forget and let them spoil in the fridge. I belong to a called Support Buddies. Those ladies are more formal, very careful to measure and plan a daily menu, but I am a more hit or miss person. If you'd like, I can privately email you some of the menus these ladies do. It might be more along the lines of how you dine. They might give you ideas. All I can tell you is that I'm eating more food than I have in ages. I was practically living on a large skim milk latte, 1 Blondie, and about 1/2 a box of pasta. How much less could I actually EAT, yet I was continuing to gain. Blew me away that all my fruit and veggies were in my imagination. <LOL> This week I will challenge myself to remember to eat some green and yellow squash I bought today.... Hope this helps!
