The spice is warmed by the food - not warmed directly. * Exported from MasterCook * Chickpeas with Onions and Tomatoes (Chole) Recipe By :From Bengal to Punjab by Smita Chandra Serving Size : 4 Preparation Time :0:00 Categories : Meatless Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium onions fresh ginger (3/4-inch piece) 6 cloves garlic 4 tablespoons vegetable oil 1 teaspoon cumin seed 1 bay leaf cinnamon stick (1/2-inch piece) 2 medium tomatoes -- coarsely chopped 1/2 teaspoon ground coriander seed 1/2 teaspoon ground turmeric salt -- to taste 1/4 teaspoon cayenne pepper 3 cups cooked chickpeas -- drained 1/2 teaspoon garam masala 1 tablespoon fresh lemon juice 1. Chop the onions finely. Grate the ginger and garlic. In a large heavy-bottom skillet over medium heat, warm the oil. Add cumin, bay leaf and cinnamon. When the spices darken (1 to 2 seconds), add the grated ginger and garlic. Cook for 1 minute, then add the chopped onions and saute until golden brown (12 to 15 minutes). 2. Add the tomatoes, coriander, turmeric, salt and cayenne. Cook until the tomatoes soften (5 minutes). Add chickpeas, cover and reduce the heat to low. Cook 10 minutes. 3.
