Hello everyone,

I am a new vegetarian as well as being new to this list, I hope to learn

from you as well as share. Some of the recipes coming through look soooo

good, can't wait to try them! I acquired this recipe on the net it was

originally submitted by Christine Johnson. I made some changes to it as I

found myself making a bigger batch then the original recipe called for!

 

 

Aloo Phujia

2 onions, chopped

 

 

 

1/2 + 1/8 cup vegetable oil

 

 

 

2 1/2 pounds potatoes, peeled and cubed

 

 

 

2 1/2 teaspoons salt

 

 

 

1 scant teaspoon cayenne pepper

 

 

 

1 scant teaspoon ground turmeric

 

 

 

1/2 scant teaspoon cumin

 

 

 

4 tomatoes, chopped

 

 

 

Directions

 

 

 

Lightly brown onion in oil in a medium size skillet.

 

 

 

Stir in salt, cayenne, turmeric and cumin. Add potatoes and cook 10 minutes

stirring occasionally.

 

 

 

Add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes.
