Basil Or Parsley And Yogurt Sauce

Amount Measure Ingredient -- Preparation Method

1 1/2 cups plain low-fat yogurt or soy yogurt

1/2 cup firmly packed fresh basil or parsley

1 tablespoon minced chives or scallion

1 1/2 teaspoons honey

1/2 teaspoon prepared mustard

1/4 teaspoon ground cumin

1/4 teaspoon coriander

 

Makes about 1 1/2 cups

 

Use this sauce as a refreshing counterpoint to strong or spicy

marinades. It's perfect, for instance, as a sauce for Curried Grilled Tempeh.

 

Combine the ingredients in the container of a food processor and process

until all that remains of the herb is tiny flakes.
