GRILLED SEITAN TERIYAKI: When preparing the Teriyaki Marinade, use only

half the amount of soy sauce called for, since seitan is somewhat salty to

begin with. Prepare grill. Cut seitan into chunks about 2 inches square

by 1 inch thick. Marinate with Teriyaki Marinade and grill, turning every

2 minutes or so, for a total of 6 to 10 minutes, or until the outside is

dark brown and crisp. Serve with Basil or Parsley and Yogurt Sauce or Red

Onion Relish.

 

SEITAN AND GRILLED VEGETABLES TERIYAKI: When preparing the Teriyaki

Marinade, use only half the amount of soy sauce, since seitan in somewhat

salty to begin with. Cut seitan into chunks about 1 to 1 1/2 inches square

and press gently between layers of paper towel to squeeze out

liquid. Alternate on skewers with vegetables of your choice. Use 3 or 4

of the following: steamed, bite-sized pieces of broccoli, cherry tomatoes,

mushrooms, small eggplant dice, zucchini dice, parboiled baby onions.

 

Prepare grill. Brush the ingredients with Teriyaki Marinade. Grill,

turning carefully, until touched with charred spots, about 10 minutes total.

 

SWEET AND SAVORY GRILLED SEITAN: Prepare grill. Cut seitan into chunks

about 2 inches square by 1 inch thick. Brush on all sides with Sweet and

Savory Grilling Sauce (see separate recipe). Grill on both sides, brushing

with additional marinade as needed, about 5 minutes on each side, or until

touched with charred spots. Let guests pass around additional sauce to put

on the seitan.
