crockette potato and rosemary soup

my uncle has a crockette - a 1 quart crock pot, good for fondu and keeping dip

warm. Well, he's experimenting - using it to make meals. He's tried stew and

didn't like it so well. he's tried swiss steak - with round and he says

horseradish and onion instead of tomato and he liked that. The cooker comes

with a booklets with some recipes. I'll see if i can get a copy next time we

visit

 

anyway, if you have recipes to feed 1 or 2 that are safe to make in the 1-quart

crockette, we'd appreciate hearing from you. Here's a soup from a gardener

Vegetarian Potato and Rosemary Soup

Amount Measure Ingredient -- Preparation Method

1 cup half and half

1 tablespoon all-purpose flour

1/4 cup red onion -- diced

2 garlic cloves -- minced

1/3 cup diced carrots

1/2 cup diced celery

salt and pepper to taste

2 cups sliced new red potatoes -- bite sized

1/4 cup chopped bell peppers

1 tablespoon chopped fresh rosemary

dash tabasco® sauce (optional)

 

Add all ingredients together in a slow cooker. Stir and cook covered for five to

six hours.

 

Yield: 2 (1.5-cup) servings

TIPS - Use the right-sized crockpot. Slow cookers are designed to cook food

properly when half to three-quarters full. The ingredients in this recipe yield

about 3 1/4 cups volume, which can just fit into a 1-quart slow cooker (aka.

" crockette " or " mini-crockpot " ).

 

Watch small pots. The 1-quart cookers have no temperature control: they are

either on or off. To be safe, monitor these small pots. Add water and stir

occasionally to be sure the food does not burn.
