Place in a bowl and mix with remaining ingredients. Preheat oven to 375F. Lightly oil two small baking sheets (preferrably lipped). Place the potatoes on the trays and bake for 20-40 minutes until golden brown, switching the trays halfway through. Use a spatula to flip the fries periodically. Lightly salt, to taste.
