This was last night's dinner. I got it from the Well Sweep Herb Farm

Cookbook. This was sooo good. DH wants me to make it again.

Summer Spaghetti

 

Recipe By : Well Sweep Herb Farm Cookbook, p. 30

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 cup olive oil

10 plum tomatoes (to 12) -- sliced*

20 basil leaves -- torn**

2 cloves garlic (to 4) -- crushed & pressed***

1 tsp salt

6 twists black pepper (to 8)

1 lb spaghetti

Garnish:

Parmesan cheese -- freshly grated

 

Crush first 6 ingredients with a wooden spoon or potato masher at least 1-2

hours before serving. Let stand at room temp.

 

Cook spaghetti, then toss with tomato mixture. Serve as a side dish or

entree.

 

Easy and delicious.

NOTES : Risa's notes:

 

* I chopped them coarsely.

** I used 3 kinds of basil and I julienned them.

*** I used 3 cloves.

 

I didn't have several hours to let the mixture infuse so I heated it for a

few minutes, just before it started boiling I turned it off and let it sit

and infuse. Then I poured it over the pasta and mixed it well.
