Guest guest Posted August 8, 2001 Report Share Posted August 8, 2001 * Exported from MasterCook * Italian Eggplant Stir Fry Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 garlic cloves -- diced 1 onion -- sliced in half moons 1 large eggplant -- cubed or diced 2 cups mushrooms -- sliced 1 bell pepper -- sliced in strips 2 tablespoons tamari or Bragg's 2 tomatoes -- cubed 1/4 cup fresh basil -- chopped 1/3 cup fresh dill -- chopped 1/4 teaspoon black pepper 1 tablespoon nutritional yeast 1 teaspoon sea salt In a skillet, saute the garlic in a little oil and then the onion slices. Add the egplant and cover, allowing it to soften. In a couple of minutes, add the mushrooms and then the pepper. Season with tamari. Cover and simmer a couple more minutes. Add tomatoes and remaining seasonings. Simmer briefly until tomatoes are soft. Serve as is or over grain or pasta.
