Guest guest Posted August 8, 2001 Report Share Posted August 8, 2001 * Exported from MasterCook * Tofu Benedict Recipe By :Marissa (panman.mit.edu) Serving Size : 2 Preparation Time :0:00 Categories : Analog Entree Soyfoods Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- " EGG " : 1/4 tofu block EGGLESS HOLLANDAISE SAUCE: 1/4 cup veganaise or other eggless mayonnaise 1/4 cup plain soy yogurt 1 tablespoon mustard 1 tablespoon lemon juice -- (optional) 1/4 teaspoon ground white pepper (optional) 2 English muffins Slice tofu into 1/8 " thick slices. Cut in circles with a glass or cookie cutter. Season with nutritional yeast flakes and oil. Grill or fry. Place on top of two English Muffins. Sprinkle Vegan Bacon bits on top. Pour Vegan Hollandaise Sauce over. Variations: Use Tofu egg, placed on two English Muffins, and sprinkle sundried tomatoes, vegan bacon bits, and avocado-lemon sauce.
