Guest guest Posted August 7, 2001 Report Share Posted August 7, 2001 Parmesan Potato Slices hazelnut salad dressing * Exported from MasterCook * Hazelnut Dressing with Herbs de Provence Recipe By :Charlotte's Gardens Serving Size : 24 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons white wine vinegar 1 tablespoon Dijon mustard 1 Pinch salt 1/8 teaspoon sugar 1/8 teaspoon fresh ground pepper 1/8 teaspoon grated nutmeg 3 tablespoons Herbes de Provence 1 cup hazelnut oil -- plus 2 tablespoons hazelnut oil In a large bowl, combine the vinegar, mustard, salt, sugar and pepper. Beat with a wire whisk. Add the nutmeg and beat well for one minute. Very slowly add the oil in tiny droplets, beating constantly with the whisk. Taste for seasoning. To serve: Toss with salad greens. Mix melted butter and herbs de provence; brush on both sides of the potatoes slices. Place on cookie sheet and broil 7-9 minutes or until they start to brown. Turn potatoes over and sprinkle with parmesan cheese. Broil additional 5 minutes or until tender.
