Hazelnut Dressing with Herbs de Provence

Amount Measure Ingredient -- Preparation Method

2 tablespoons white wine vinegar

1 tablespoon Dijon mustard

1 Pinch salt

1/8 teaspoon sugar

1/8 teaspoon fresh ground pepper

1/8 teaspoon grated nutmeg

3 tablespoons Herbes de Provence

1 cup hazelnut oil -- plus

2 tablespoons hazelnut oil

 

In a large bowl, combine the vinegar, mustard, salt, sugar and pepper.

 

Beat with a wire whisk. Add the nutmeg and beat well for one minute. Very slowly

add the oil in tiny droplets, beating constantly with the whisk. Taste for

seasoning.

 

To serve: Toss with salad greens. Top with chopped roasted hazelnuts

2 6-oz each baking potatoes

2 tablespoons melted butter

2 1/2 teaspoons Herbes de Provence

1/4 cup parmesan cheese

 

Slice potatoes 1/4 inch thick length wise into wedges.

 

Mix melted butter and herbs de provence; brush on both sides of the potatoes

slices. Place on cookie sheet and broil 7-9 minutes or until they start to

brown. Turn potatoes over and sprinkle with parmesan cheese. Broil additional 5

minutes or until tender.
