Guest guest Posted August 6, 2001 Report Share Posted August 6, 2001 The Nutty Vinaigrette used in the Marinated Wild Rice recipe is a variation described at the end of this recipe. kathleen * Exported from MasterCook * Basic Vinaigrette Recipe By : Vegetarian Celebrations by Nava Atlas, page 256 Serving Size : 1 Preparation Time :0:00 Categories : Salads, Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup olive oil 1/4 cup canola oil 1/4 cup white wine vinegar 1/2 lemon -- juice of 2 teaspoons Dijon mustard freshly ground pepper -- to taste 1 teaspoon mixed dried herbs Makes about 3/4 cup. Combine all the ingredients in a cruet and shake well. Shake well before each use. Per 2-teaspoon serving: Calories: 55, Carbohydrate: 0g, Total fat: 5g, Cholesterol: 0g, Protein: 0g, Sodium: 16mg VARIATIONS: Garlic Vinaigrette: Add 1 or 2 cloves garlic, to taste, cut in half lengthwise or crushed, to the above dressing. Allow to marinate overnight before using.
