Roasted Garlic and Basil Tomato Sauce

1 whole garlic bulb

1 small onion -- chopped

1/2 green pepper -- diced

1 tablespoon oil

1 cup fresh basil -- chopped

1 tablespoon Bragg's or 1/2 teaspoon sea salt

2 cans tomato sauce

 

Place entire bulb of garlic, with peel iintact, in toaster oven for 10 minutes,

until soft.

 

In a skillet, saute onion and green pepper in oil (may substitute water). Saute

until onion is translucent.

 

Take garlic out of oven and peel. (It should be very easy to peel.) Dice it.

Add diced garlic and chopped basil to saute. Add Bragg's and stir for just a

moment.

 

Add canned sauce (or 2 cans diced tomatoes). Let simmer 20-30 minutes until

flavors are blended, adding more salt or basil if desired.
