Guest guest Posted August 6, 2001 Report Share Posted August 6, 2001 * Exported from MasterCook * Cheddar Corn Muffins Recipe By : Vegetarian Celebrations by Nava Atlas, page 96 Serving Size : 12 Preparation Time :0:00 Categories : Breads, Quick Grains And Cereals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup whole wheat flour 3/4 cup stone-ground cornmeal 1/4 cup unbleached white flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 2 eggs -- beaten 2 tablespoons honey 1 1/2 cups plain nonfat yogurt 1 cup grated reduced-fat cheddar cheese Makes 1 dozen Preheat the oven to 375 degrees. Combine the first 6 ingredients in a mixing bowl. In a smaller bowl, combine the remaining ingredients and mix thoroughly. Add the wet ingredients to the dry and stir vigorously to combine. Divide among 12 oiled or paper-lined muffin tins. Bake for 12 to 15 minutes, or until a toothpick inserted in the center of one tests clean.
