Guest guest Posted August 6, 2001 Report Share Posted August 6, 2001 * Exported from MasterCook * Olive-Rice Salad Recipe By : Vegetarian Celebrations by Nava Atlas, page 94 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Rice Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup raw medium-grain brown rice 1 cup cooked corn kernels 1/3 cup chopped black olives 1/3 cup chopped green olives 1 medium red bell pepper -- finely diced 1 1/2 cups finely shredded white cabbage 1/3 cup chopped fresh parsley 2 scallions -- minced 1 tablespoon olive oil 1/2 lemon -- Juice of OR more to taste freshly ground pepper -- to taste 6 servings Bring 2 cups of water to boil in a saucepan. Stir in the rice, return to a boil, then lower the heat and simmer, covered, until the water is absorbed, about 35 minutes. Fluff the rice with a fork, then let it cool completely. Combine the rice with the remaining ingredients in a mixing bowl and toss together thoroughly. Pack in a securely lidded plastic container to transport.
