Guest guest Posted August 5, 2001 Report Share Posted August 5, 2001 * Exported from MasterCook * Peanut Butter-Carrot Cookies Recipe By : Vegetarian Celebrations by Nava Atlas, page 88 Serving Size : 30 Preparation Time :0:00 Categories : Cookies And Bars Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat pastry flour 1/2 cup oat bran or fine oatmeal 1 teaspoon baking powder 1/2 teaspoon cinnamon 1/4 teaspoon salt 1/4 teaspoon ground nutmeg 1/4 teaspoon ginger 1/4 teaspoon allspice 1/4 cup reduced-fat margarine -- (1/2 stick) at room temperature 1/2 cup reduced-fat peanut butter at room temperature 2/3 cup light brown sugar 2 egg whites -- lightly beaten 1/2 cup firmly packed finely grated carrot 1/2 cup raisins Makes about 30 Tiny flakes of carrot add color and texture to these substantial spiced cookies. Preheat the oven to 350 degrees. Combine the first 3 ingredients in a mixing bowl and stir in the spices. In another bowl, cream together the margarine, peanut butter, and brown sugar. Stir the egg in vigorously until the mixture is smooth, then stir in the grated carrot and raisins. Work the wet mixture into the dry to form a stiff dough. Drop heaping teaspoonfuls onto 1 or 2 baking sheets and flatten with a fork. Bake for 12 to 15 minutes, or until the edges begin to turn golden. Cool on a rack. Pack into a tightly lidded flat plastic container to transport.
