Guest guest Posted August 3, 2001 Report Share Posted August 3, 2001 * Exported from MasterCook * Hoisin Glazed Tofu Over Rice Recipe By :Rice and Spice: Robin Robertson Serving Size : 6 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound extra-firm tofu -- drained and blotted dry 1/4 cup hoisin sauce 2 tablespoons tamari or other soy sauce 2 tablespoons water 1 tablespoon vegetable oil 1/4 tablespoon minced fresh ginger 2 tablespoons minced scallions 1/4 teaspoon red pepper flakes 2 1/2 cups cooked long-grain white rice 2 1/4 cups cooked long-grain brown rice 1 tablespoon dark sesame oil 1. Cut the tofu into 1/2-inch-wide slices and set aside. 2. In a small bowl, combine the hoisin, tamari, and water; set aside. 3. Heat the oil in a large skillet or wok over medium heat until hot. Add the ginger, scallions, and red pepper flakes and stir-fry for about 10 seconds, or until fragrant. Add the hoisin mixture and bring to a simmer, stirring. Add the tofu and stir until heated through, about 2 minutes. 4. Meanwhile, in a large skillet or saucepan, heat the rice, both together, with the sesame oil, tossing to coat. Serve the tofu over the rice. NOTES : Hoisin sauce, a flavorful Chinese condiment similar to barbecue sauce, adds an exotic sweet spiciness to any stir-fry. It can be found in Asian markets and well-stocked supermarkets. I like the taste and textural effect achieved by combining half white and half brown rice, but any rice would be great in this recipe. - Robin Nutr.
