Basil Parmesan Bread (ABM)

INGREDIENTS AT ROOM TEMP:

1/2 cup milk -- PLUS

3 tablespoons milk -- combined

1/2 cup shredded Parmesan cheese

or pecorino romano cheese

2 cups bread flour

3/4 teaspoon salt

12 teaspoons freshly ground black pepper -- or more to taste

3 tablespoons chopped fresh basil

or 2 tsp dried basil

1 tablespoon sugar

2 teaspoons olive oil

2 teaspoons yeast -- to 3 tsp

 

Add the ingredients to your machine according to the manufacturer's

instructions.

 

Bake on regular white, on light, or rapid cycle.

 

EDITOR'S NOTE: Author lists a variable amount of yeast without

comment. Taking cue from the introduction, use more yeast for the

rapid cycle instead of rapid rise yeast. -kitpath 2001-08-04

 

AUTHOR'S TIP - These recipes are for 1 pound loaves but they can be

increased. To make 2 lb loaves, double the proportions. To make 1.5-lb

loaves, increase all of the ingredients by one half.

 

MasterCook TIP: change the number of servings (slices) from 8 to 12 to

16 for a 1 to 1.5 to 2 pound loaf.

NOTES : The cottage cheese adds a delicate moisture to this loaf and

you can use regular or low-fat. Serve thin slices of this bread with

pesto spread.
