Bread Salad With Tomato, Cucumber, Onion And Basil

8 ounces rustic bread

cut into 1/2-inch slices

1/2 cup olive oil

2 tablespoons red or white wine vinegar

3/4 teaspoon salt

2 medium-large fresh tomatoes -- coarsely chopped

1/2 English cucumber -- peeled

and coarsely chopped

1 small red onion

coarsely chopped and rinsed

3/4 cup loosely packed slivered fresh basil

black pepper

 

Serves 4 to 6.

 

Toast bread in toaster, toaster oven or oven broiler and cut into 1/2-inch

cubes. Set aside.

 

In large bowl, whisk oil, vinegar and salt. Add tomatoes, cucumber, onion,

basil and bread and toss. Let stand 15 to 30 minutes at room temperature.

 

Press salad occasionally with back of spoon so tomatoes release their

juice. Season generously with pepper.
