This strawberry soufflé is adapted from a friend's idea. There is practically no fat, but the flavor is intense. The weight of the berries is precisely calculated to the amount of egg whites, so the recipe works best made in individual soufflé dishes (ramekins) with only a cup of berries. In small bowl, combine strawberries, orange and lemon juices. Let stand at room temperature 2 hours. When fruit is soft, squeeze out liquid. Discard liquid or reserve for another use. Finely chop strawberries and return to bowl. Add brown sugar and stir to dissolve. Preheat oven to 425 degrees. Lightly spray 6 individual soufflé dishes (ramekins) with cooking spray. Set on baking sheet. Beat egg whites until very frothy. Fold egg whites, using 1/2 cup at a time, into fruit. Quickly spoon into prepared ramekins. Place ramekins with baking sheet in oven. Bake 12 to 14 minutes or until soufflés puff. Serve immediately.
