Grilled Portobello Mushrooms And Onions

Amount Measure Ingredient -- Preparation Method

8 portobello mushroom caps -- up to 12

2 large sweet onions

cut 1/2-inch thick to make 8 to 12 slices

1/3 cup olive oil

1 tablespoon minced fresh rosemary

2 cloves garlic -- minced

Salt

8 slices rustic bread -- 1/2-inch-thick

up to 12

1/2 cup grated Parmesan cheese -- (2 oz.)

 

Serves 4 to 6.

 

Place mushrooms and onions on large tray.

 

In glass measuring cup, mix oil, rosemary and garlic. Press garlic with

back of spoon to extract juice. Drizzle over mushrooms and onions and rub

to coat evenly. Sprinkle with salt.

 

Place onions directly on preheated gas or charcoal grill and cook 2 minutes

on each side or until golden, turning carefully. Move onions to side away

from heat. Place mushrooms, fluted-side up, directly over heat source and

cook 1 minute on each side. Place over onions, fluted-side up.

 

Place bread slices on tray. Rub both sides with any remaining oil. Place

slices on grill over heat source and cook 30 to 40 seconds each side, just

until golden. Place on tray and sprinkle evenly with cheese.

 

Cover grill and cook vegetables 10 to 12 minutes more or until juices start

to pool in mushrooms. Remove mushrooms and onions to serving

platter. Place bread slices on grill away from heat. Cover and grill 5

minutes or until hot.

 

To assemble, place 1 combination stack of mushroom and onion on each slice

of toasted bread.
