Artichokes With Tangy Dipping Sauce

1/3 cup plain nonfat yogurt

1/3 cup reduced-calorie mayonnaise

2 tablespoons fresh lemon juice

1 teaspoon curry powder

4 artichokes

1 lemon -- quartered

 

Serves 4.

 

In medium bowl, whisk together yogurt, mayonnaise, lemon juice, and curry

powder. Let stand at room temperature 30 minutes.

 

With kitchen shears, clip points from artichoke leaves. Bring 3 quarts

water to boil; add lemon and artichokes. Boil, uncovered, until tender,

about 25 minutes. Drain; remove choke.

 

To serve, center artichoke on small plate, then spoon dipping sauce into

its cavity or small bowl.

Protein 6 g, Fat 7 g, including sat. fat 1 g, Cholesterol 7 mg, Sodium 280
