Kathleen * Exported from MasterCook * Artichokes With Tangy Dipping Sauce Recipe By : Healthful Cooking by Mary Carroll, Star Tribune 5/24 Serving Size : 4 Preparation Time :0:00 Categories : Appetizers And Snacks Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup plain nonfat yogurt 1/3 cup reduced-calorie mayonnaise 2 tablespoons fresh lemon juice 1 teaspoon curry powder 4 artichokes 1 lemon -- quartered Serves 4. In medium bowl, whisk together yogurt, mayonnaise, lemon juice, and curry powder. Let stand at room temperature 30 minutes. With kitchen shears, clip points from artichoke leaves. Bring 3 quarts water to boil; add lemon and artichokes. Boil, uncovered, until tender, about 25 minutes. Drain; remove choke. To serve, center artichoke on small plate, then spoon dipping sauce into its cavity or small bowl. Nutrition information per serving: Calories 140, Carbohydrates 17 g, Protein 6 g, Fat 7 g, including sat. fat 1 g, Cholesterol 7 mg, Sodium 280 mg, Calcium 99 mg, Dietary fiber 7 g.
