Boy was this yummy. Unbelievably good. Very fattening but so good. And soooo

simple to do. Almost no cooking.

Pasta w/Gorgonzola Sauce

 

Recipe By : The Savory Way by Deborah Madison, p. 149

Amount Measure Ingredient -- Preparation Method

1/2 lb dried pasta -- I used farfalle

1 clove garlic -- thinly sliced

6 oz Gorgonzola Cheese -- chopped

2 tbsp unsalted butter

salt

freshly ground pepper

 

Bring a large pot of water to boil for the pasta. Set a bowl large enough to

hold the cooked pasta over the pot of heating water and add the sliced

garlic, the cheese, and the butter. As the water heats, everything will

begin to soften and melt.

 

When the water comes to a boil, remove the bowl, add salt to taste to pasta

water. Add the pasta, and give it a stir to separate the pieces. Cook until

the pasta is done as you like it; then scoop it out and add it directly to

the bowl with the melted cheese (don't worry if all of the cheese hasn't

melted - the heat of the pasta will do the rest.) Toss everything together,

season with pepper to taste, and serve right away in heated soup bowls (or

large pasta bowls).

This is, without a doubt, the easiest dish to put together that I know. And

for those who love blue cheeses, it will undoubtedly become a favorite. This

pasta, a salad of crisp greens, and a glass of red wine makes a perfect

meal.

 

You can be fairly flexible with the quantities. If the cheese is strong,

increase the amount of butter in proportion to it. You can also add light or

heavy cream if you want more of a sauce or if you haven't much cheese and

want to extend it. Tubular or shell-shape pasta works best in this dish -

the shapes nicely capture the unctuous sauce.

 

Makes 2-4 servings.
