2nd BBQ Side Dish - Danish Cucumbers

This was the other side dish for the bbq lunch. It came out litle a slightly

pickled cucumber and it was delicious. I used Suhyo (japanese) cucumbers and

pickle bush cukes (Kirby type cukes). Both from my garden. It came out

delicious.

 

I'm not big on pickles either.

Amount Measure Ingredient -- Preparation Method

1 lg cucumber

1 tsp salt

3 tbsp sugar

1/3 cup cider vinegar

 

Very finely slice cucumber. Sprinkle with salt. Allow to set for a few

hours. Drain cucumbers. Blend sugar and vinegar and pour over cucumbers.

Chill and serve.

NOTES : Risa's notes:

 

I let the cucumbers sit with the salt on them for about 4 hours. Drained

them well.

 

I used cucumbers that had very small or few seeds (bush pickle, Suhyo

cucumber). The smaller the seeds, or the fewer, the better.
