I used Suhyo (japanese) cucumbers and pickle bush cukes (Kirby type cukes). Both from my garden. It came out delicious. I'm not big on pickles either. * Exported from MasterCook * Danish Cucumbers Recipe By : Well Sweep Herb Farm Cookbook Serving Size : 6 Preparation Time :0:00 Categories : Salads Side Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lg cucumber 1 tsp salt 3 tbsp sugar 1/3 cup cider vinegar Very finely slice cucumber. Sprinkle with salt. Allow to set for a few hours. Drain cucumbers. Blend sugar and vinegar and pour over cucumbers. Chill and serve. - - - - - - - - - - - - - - - - - - NOTES : Risa's notes: I let the cucumbers sit with the salt on them for about 4 hours. Drained them well. I used cucumbers that had very small or few seeds (bush pickle, Suhyo cucumber). The smaller the seeds, or the fewer, the better.
