Spiced Potatoes and Cauliflower

Amount Measure Ingredient -- Preparation Method

1 tablespoon vegetable oil

1 medium onion -- finely chopped

2 teaspoons minced garlic -- * see note

1 teaspoon powdered ginger

OR finely grated ginger

pepper -- to taste

1/2 teaspoon cumin powder

OR cumin seeds

1/2 teaspoon cardamom powder

OR cardamom seeds

2 teaspoons ground cloves -- * see note

2 large potatoes, peeled and diced -- * see note

1 small head of cooked cauliflower -- * see note

3 tablespoons reserved cooking water -- * see note

salt -- to taste

 

*This recipe calls for the following which need to be adjusted to suit your

needs or taste:

1-2 teaspoons minced garlic

1-2 teaspoons ground cloves

1-2 cooked potatoes, peeled and diced

1 small head of cooked cauliflower, separated into florets

2-3 tablespoons reserved cooking water from potatoes and cauliflower

 

Heat oil in a large skillet or pot over medium heat. Sauté onion until tender.

Stir in garlic and spices and continue to sauté for a minute. Add vegetables

and reserved cooking water. Cover, reduce heat to low, and cook for about 5

minutes until vegetables are very tender. Mash lightly with a fork, and add

salt to taste. Serve with rice or flatbreads.
