Guest guest Posted July 30, 2001 Report Share Posted July 30, 2001 * Exported from MasterCook * Algerian Vegetarian Stew Recipe By : Islamveg.com Serving Size : 1 Preparation Time :0:00 Categories : Soups & Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup olive oil 2 medium zucchini, unpeeled -- cut into 3/4 " cubes 1 large eggplant, peeled -- cut into 3/4 " cubes 2 large green bell pepper -- * see note 1 medium carrot -- * see note 3 medium onions -- chopped 1 garlic clove -- peeled and crushed salt and pepper -- to taste 1 can tomatoes SIZE OF CAN - 19 ounces (540 ml.) 1 tablespoon dried basil *This recipe calls for 2 large green bell pepper, chopped into small pieces. Also calls for, 1 medium carrot, peeled and chopped into small pieces. In a saucepan, heat the oil over low heat and add all the ingredients except the tomatoes and basil. Cover and cook for 45 minutes. Stir in the tomatoes and cook for another 15 minutes.
