Algerian Vegetarian Stew

Amount Measure Ingredient -- Preparation Method

1/4 cup olive oil

2 medium zucchini, unpeeled -- cut into 3/4 " cubes

1 large eggplant, peeled -- cut into 3/4 " cubes

2 large green bell pepper -- * see note

1 medium carrot -- * see note

3 medium onions -- chopped

1 garlic clove -- peeled and crushed

salt and pepper -- to taste

1 can tomatoes

SIZE OF CAN - 19 ounces (540 ml.)

1 tablespoon dried basil

 

*This recipe calls for 2 large green bell pepper, chopped into small pieces.

Also calls for, 1 medium carrot, peeled and chopped into small pieces.

 

In a saucepan, heat the oil over low heat and add all the ingredients except the

tomatoes and basil. Cover and cook for 45 minutes. Stir in the tomatoes and

cook for another 15 minutes. Stir in the basil, place in a serving dish, and

serve with cooked rice or mashed potatoes.
