Fruited Coucous Salad

Amount Measure Ingredient -- Preparation Method

3/4 cup pineapple juice

1/2 cup water

1 cup uncooked whole-wheat couscous

1/2 papaya -- seeded and diced

1/2 mango -- seeded and diced

1 orange -- segmented and diced

1 kiwi fruit -- skinned and diced

1 cup fresh pineapple chunks

or 3/4 cup canned pineapple tidbits in juice -- drained

8 strawberries -- sliced

3 Tbsp. honey

2 Tbsp. minced fresh mint

 

Combine water and juice and heat to boiling. Mix boiling juice and couscous in

bowl; set aside. Combine all the diced fruits and the honey in a non-reactive

bowl. Add the couscous and mint and mix well. Cover the bowl and let the

mixture chill in the refrigerator for 2 hours or overnight. Serve chilled or at

room temperature. Serves approximately 8 one cup servings.

 

This fruit salad is loaded with carotenoids, vitamin C, and potassium and is a

delicious mix of fruits. Look for whole-wheat couscous in health food stores

(Loma Linda Market).
