I made this as a side dish last night and DH Loved it. It comes from VCE. I

don't know if the recipe has been posted before. If so, delete. If not,

save. It is a winner.

Sauteed Cremini Mushrooms with Garlic & Parsley

 

Recipe By : Adapted from Vegetarian Cooking for Everyone by D. Madison

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 lb cremini mushrooms -- cleaned*

3 tbsp butter, olive oil or mixture -- to 5 tbsp

salt and pepper

1/2 lemon

2 tbsp parsley -- chopped

1 lg clove garlic -- minced

Risa's addition:

1 tsp dried thyme -- crumbled

 

Cut the cremini mushrooms into halves, quarters or thick slices. Melt the

butter in a wide skillet (I used nonstick) over high heat. Add the mushrooms

all at once and immediately move them around the pan so they get coated

well. Keep sauteeing until the pan appears to be dry. Once the mushrooms

have given up their juices, and re-absorbed them, they'll begin to brown

nicely. When golden, season well with salt, pepper and thyme. Add some of

the lemon juice, the parsley and garlic. Mix well and serve.

NOTES : Risa's notes:

 

* You can use any type of mushroom you have. If all you have is button

mushrooms, that is ok.
