Guest guest Posted July 25, 2001 Report Share Posted July 25, 2001 * Exported from MasterCook * Rice Pudding Recipe By :Nettie Cronish (1996) Serving Size : 6 Preparation Time :0:00 Categories : Chapter 2 Desserts Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups unsweetened apple juice 1 apple -- peel and/or core, dice (or pear or peach) 1/3 cup raisins 1/8 teaspoon freshly grated or ground nutmeg 1/8 teaspoon ground cinnamon 2 tablespoons maple syrup 2 cups cooked short-grain brown rice 2 tablespoons smooth almond butter or Tahini 1/4 cup lightly toasted almonds -- coarsely chopped In a medium-sized saucepan combine 2 cups apple juice, fruit, raisins, spices and maple syrup and bring to a simmer. Add rice while stirring. Cover and cook over a low heat for 30 minutes. Whisk together remaining 1/4 cup apple juice with the almond butter or tahini to make a smooth paste. Add to the saucepan and stir constantly until the mixture thickens. Remove from heat and garnish with the nuts. Serve warm or chilled.
