Guest guest Posted July 24, 2001 Report Share Posted July 24, 2001 * Exported from MasterCook * Garlic Basil Cheese Spread Recipe By :Moosewood Collective Serving Size : 12 Preparation Time :0:00 Categories : Condiments Moosewood LF Fav Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup plain nonfat yogurt -- gelatin free 2/3 cup lowfat cottage cheese -- (1%) 1 tablespoon roasted garlic 2 tablespoons chopped fresh basil salt and black pepper 1/4 cup diced roasted red peppers 1. Place yogurt in a yogurt drainer or in a strainer lined with a coffee filter. Set aside to drain for about an hour. This should yield about 1/2 cup drained yogurt. 2. Combine the drained yogurt, cottage cheese, garlic and basil in a food processor and blend until smooth. Add salt and pepper to taste. Stir in the diced roasted red peppers, if using. Cover and refrigerate, allow to sit for at least 30 minutes so the flavors will marry. TIMING TIP - If you roast the garlic and peppers in advance while the yogurt drains, the spread can be assembled in minutes.
