Guest guest Posted July 23, 2001 Report Share Posted July 23, 2001 * Exported from MasterCook * Boardwalk Bananas Recipe By :Moosewood Collective Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup semisweet chocolate chips 1/4 cup milk 2 large firm bananas 2/3 cup crushed roasted unsalted peanuts In a double boiler, melt the chocolate with the milk, stirring until smooth. Cut each banana into 3 or 4 pieces and insert a skewer or ice cream stick into each piece. Place the peanuts on a small plate. Dip each banana piece into the melted chocolate, roll in the peanuts, and place on a wax paper-lined baking sheet. Place the bananas in the freezer for 1 1/2 to 2 hours, until icy but not hard. If the bananas harden, allow them to thaw for about 15 minutes before serving. Variation: Substitute 2/3 cup shredded unsweetened or sweetened coconut or coarsely gound toasted almonds, cashews, or hazelnuts for the peanuts. This treat is reminiscent of the Jersey Shore in the 50's, when all long the boardwalk you could purchase a frozen chocolate-covered banana to eat while riding a bicycle-built-for-two. We find this is a perfect dessert-on-a-stick for children, and it's so easy to make that they can help with preparation, too. Nutr.
