Yummy. * Exported from MasterCook * Greek Green Bean Salad Recipe By : A Collection of Favorite Recipes from Well Sweep Herb Farms Serving Size : 4 Preparation Time :0:00 Categories : Cheese Nuts Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb green beans -- stemmed Dressing: 3 tbsp white wine vinegar 1 tbsp lemon juice 1 clove garlic -- minced 4 scallions -- finely chopped 1/3 cup mint -- chopped 1/3 cup basil -- chopped 1 tbsp oregano -- chopped 1 tbsp olive oil Toppings: 1/4 cup feta cheese -- crumbled 1/4 cup almonds -- toasted slivered 1 hard-boiled egg -- finely chopped* 2 tomatoes -- slice in wedges** 1/4 cup olives -- sliced Combine dressing ingredients in jar and set aside. Steam the beans until they are tender and still bright green. Drain thoroughly. Cool.
