Guest guest Posted July 22, 2001 Report Share Posted July 22, 2001 * Exported from MasterCook * Delicata Squash Rings Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 440 Serving Size : 2 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Delicata squash (12 to 16 ounces each) 1 1/2 tablespoons olive or vegetable oil Salt and freshly milled pepper Chopped parsley OR Gremolata (see separate recipe) OR any of the suggested sauces and seasonings for winter squash (see separate recipe) SERVES 2 TO 4 These take just 10 to 12 minutes to cook and when finished are glazed with a rich caramel coating from the natural sugars in the squash. Serve these as a side dish or add them as an attractive garnish to winter vegetable stews. Peel the squash with a vegetable peeler, slice off the ends, and scoop out the seeds with a teaspoon. Cut the squash into rings about 1/3 inch thick. Heat the oil in a wide skillet, add the squash, and fry over medium heat until richly colored on the bottom, about 6 minutes. Turn and cook on the second side until tender.
