Hi all,

 

Coming out of lurkdom to share a great recipe. Here's a yummy and easy pasta

dish I made the other night (note: this was cross-posted to TNT). This is a

great way to use up that bumper green bean crop! I added about 1/4 cup minced

onion to the dish with the garlic.

Szechuan Green Beans and Soba

12 ounces soba noodles

1 pound green beans

3 tablespoons sesame oil

3 medium garlic cloves -- minced

1/2 teaspoon crushed red pepper

1 1/2 tablespoons Tamari soy sauce

1/4 cup sesame seeds -- toasted

 

Cook noodles according to package directions. Drain, rinse under cold water, and

drain again.

 

Wash and trim green beans. Cut diagonally into bite-size pieces. Heat oil in

large saute pan or wok. Add the garlic and then immediately add the beans and

red pepper. Lower the heat to medium and cook, stirring frequently, for about 5

minutes, until beans are tender and bright green.

 

Add the noodles and toss well to mix. Add the soy sauce and mix well. Serve

sprinkled with the seasame seeds.

NOTES : Candace's notes: I used 16 ounces of noodles and a little over 1 pound
