Guest guest Posted July 20, 2001 Report Share Posted July 20, 2001 * Exported from MasterCook * Fried Green Tomatoes Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 433 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium green tomatoes -- (unripe) 3/4 cup fine cornmeal 3 tablespoons vegetable oil -- up to 4 OR clarified butter Salt and freshly milled pepper 3 tablespoons chopped basil or tarragon or parsley OR Green Chile Mayonnaise (see separate recipe) SERVES 4 Serve these as a first course or side dish, use them in a sandwich or pasta, or serve them as a garnish for a stew of corn and late summer vegetables. Slice the tomatoes crosswise 1/3 to 1/2 inch thick. Press each piece into a plate of cornmeal to coat on both sides. Heat the oil in a wide skillet over high heat until hot enough to sizzle a drop of water. Add the tomatoes, reduce the heat to medium, and fry on both sides until golden.
