Nearly every time I bite into a roasted sweet potato, I ask myself if

anything can be more delicious. With a spinach salad, a roasted sweet

potato makes an easy dinner that's rich in green and yellow

vegetables. Preheat the oven to 400F. Choose sweet potatoes of similar

size if cooking more than one. Scrub well and bake until very tender when

pierced, 50 to 60 minutes for a 12-ounce potato. To serve, slice

lengthwise, break up the flesh with a fork, and add the traditional pat of

butter, Chile Butter (see separate recipe), or even a little dark sesame

oil. Season with salt and pepper.

Scrub sweet potatoes and leave them whole or cut them into large

pieces. Steam, covered, over boiling water until tender when pierced with

a knife, 30 to 50 minutes, depending on size.

Slice steamed or boiled potatoes in half if they're small or diagonally

into 1/2-inch-thick pieces if large. Brush with vegetable oil and grill,

turning them 45 degrees after about 7 minutes. Cook on both sides or just

one. Season with salt and pepper and serve with Golden Mustard Barbecue

Sauce, and Thai Peanut Sauce (see separate recipes).

For best results, leave unpeeled potatoes whole. If cut into chunks before

cooking, they tend to become waterlogged. Cover with cold water and bring

to a boil. Lower the heat and simmer until tender when pierced with a

knife. Peel once cooked. Slice or mash and serve with butter, salt, and

pepper.

Sweet Potatoes In The Pressure Cooker

Put scrubbed whole sweet potatoes on a steaming rack in a pressure cooker,

add 1/2 inch water, lock on the lid, and bring to pressure. Maintain on

high 12 minutes for an 8-ounce potato, 25 minutes for 14 ounces, then

quickly release the pressure. Pierce the potato with a knife at the

thickest spot. If it's not fully tender, either return to pressure for 2

minutes and check again or loosely cover and steam until done.

Serves 4 to 6.

 

Leaving their skins on or not as you wish, mash 2 pounds baked, boiled, or

steamed sweet potatoes with 1 teaspoon grated orange or tangerine zest, the

juice of an orange or tangerine, and butter to taste. Season well with

salt and pepper and serve. Or try using any of these traditional

seasonings: bits of pineapple, candied ginger, toasted pecans or black

walnuts, bourbon, a few pinches nutmeg or cinnamon, allspice, and

cloves. (Leftovers can be used in Sweet Potato Muffins with Candied

Ginger, (see separate recipe) or waffles.)

Mashed Sweet Potatoes With Ginger And Sesame

Boil 2 pounds whole sweet potatoes with five slices ginger until completely

soft. Discard the ginger, peel the potatoes, and purée or pass through a

food mill. Season with salt. Stir in 1 teaspoon ground coriander, butter,

or dark sesame oil to taste. Heap in a bowl and garnish with toasted black

sesame seeds. Serves 4 to 6.

Slice cooked sweet potatoes lengthwise in half or into diagonals 1/2 inch

thick, allowing one or two halves per person. Brush lightly with vegetable

oil and broil until sizzling. Serve with salt and pepper or with a peanut

sauce, Sesame Marinade or Golden Mustard Barbecue Sauce (see separate recipes).
