Here are three basic squash recipes:

Steamed Squash

Slice 1 1/2 pounds squash and steam until tender, 5 to 8 minutes, depending

on size. When cooked, it will take on a shiny, translucent look. Toss

with butter or olive oil and chopped fresh herbs and season with salt and

pepper. Serves 4 to 6.

Boiled Squash

Drop diced, sliced, or chopped squash into a large pot of boiling salted

water and boil until tender, 3 to 5 minutes, depending on size. Drain,

shake off the excess water, toss with butter or oil, and season with salt

and pepper.

Grilled Summer Squash

Slice zucchini lengthwise into thirds or halves. Brush each side with

olive oil and season with salt. Grill on both sides until browned, turning

45 degrees once. Arrange on a platter and brush with any of the sauces

suggested for squash, especially Yogurt Sauce with Cayenne and Dill (see

separate recipe).
