Guest guest Posted July 19, 2001 Report Share Posted July 19, 2001 * Exported from MasterCook * Sautéed Spinach With Garlic And Red Pepper Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 420 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 2 garlic cloves -- chopped 2 pinches red pepper flakes 2 bunches tender spinach stems removed and leaves blanched Salt 1/2 lemon -- Juice of OR a few teaspoons red wine vinegar SERVES 4 Most greens taste great cooked in this Roman style. Heat the oil with the garlic and pepper flakes in a wide skillet over medium-high heat until the garlic begins to color. Add the cooked spinach and toss to coat it with the oil. Add 1/2 cup water and cook until it's absorbed and the greens are heated through.
