Guest guest Posted July 19, 2001 Report Share Posted July 19, 2001 * Exported from MasterCook * Spinach Or Chard Catalan Style Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 420 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 bunches spinach OR 1 large bunch chard stems removed and leaves blanched 2 tablespoons olive oil 1 large garlic clove -- sliced 1/3 cup dark or golden raisins 1/3 cup pine nuts Salt and freshly milled pepper SERVES 4 Raisins and pine nuts are what make this side dish Catalan, but the same ingredients appear in the south of France and Italy - parts of the same culinary world. Coarsely chop the cooked spinach. Warm the oil with the garlic in a wide skillet over medium heat. When the garlic is golden, remove it. Add the raisins and pine nuts and cook until the raisins are plumped and the pine nuts are golden. Add the greens and cook until they're heated through.
