Warm Garlic Spinach.........

This is my favorite way to cook spinach, and since it's my own recipe,

measurements can vary to suit the number of people you are

feeding........Once you have tried it , you will love it...............

 

To serve 4 to 6 people:

2 bags of prewashed ready to cook spinach ( from the salad section

of the produce Dept.)

1 Tblsp. minced garlic (you can by a jar of minced garlic or use fresh

cloves, the minced garlic in the jar keeps forever in the fridge and is alway

handy. More garlic can be used to suit your taste.

2 Tblsp. olive oil ( more can be used to suit your taste)

salt and pepper

wedges of fresh lemon

 

In a large saute pan, heat the olive oil, add the garlic and stir for a few

seconds over med. heat. Dont brown the garlic , as browned garlic is bitter.

Add the spinach and saute til it is all wilted. Saute to desired softness. I

like it better if I let it get very tender , but still bright green. You may

cover and staem a few minutes if desired ; but water will accumulate. Season

with salt and pepper to taste. Drain off any excessive water that may have

accumulated from the spinach, leaving a small amount, and place spinach in a

serving bowl. Squeeze some fresh lemon juice over spinach and garnish with a

lemon slice if desired. Serve with fresh lemon wedges. May be served hot or

warm.
