BTW, next week's cookbooks are Mooswood and I plan on sending some from their dessert book. * Exported from MasterCook * Hearty Lentil Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups dry lentils 1 tablespoon oil 2 onions -- chopped 3 garlic cloves -- diced 2 stalks celery -- diced 2 cups carrots -- sliced 1 eggplant (optional) -- diced 1 tablespoon nutritional yeast 1 tablespoon Bragg's or tamari Blender Ingredients: 2 cups water 1/2 tablespoon garlic powder 1/2 teaspoon dill 3/4 cup lentils -- cooked 1/4 cup tomato paste 1 tablespoon Bragg's or tamari 1 tablespoon vegetable bouillon 1/4 cup cooked carrots 1/4 teaspoon cumin **** 1 cup zucchini -- diced 1 teaspoon sea salt Cook the lentils in a separate pot. In a soup pot, saute the onion and garlic in the oil and then add celery and carrots. Allow the carrots to soften and then add the eggplant. Add the yeast and Bragg's, with a little water, and cover. Cook until carrots are soft. In a blender, whiz half the blender ingredients, pour into soup pot. Repeat the blender process another time. Add 2 to 4 cups of additional water. Add the zucchini. Add 2 to 4 cups, or the desired amount of the remaining whole cooked lentils to the pot. Add the sea salt. Simmer until the zucchini is soft. Serve.
