Greek Chick Pea Salad

Amount Measure Ingredient -- Preparation Method

Vinaigrette:

2 tablespoons water

2 tablespoons olive

1/2 cup tomato juice

1 tablespoon tomato sauce

1 tomato -- chopped

dash hot sauce

2 tablespoons vinegar

2 tablespoons sweetener

1/4 teaspoon sea salt

1/4 cup tamari soy sauce

or

1/4 cup Bragg liquid aminos

1/4 teaspoon garlic powder

Salad:

3 cups cooked chickpeas -- drained

2 tomatoes -- chopped 1/2 " thick

2 cups firm tofu -- crumbled

1/2 cup black olives -- drained

2 scallions -- sliced

1/4 cup fresh parsley -- chopped

 

Serves 4 to 6. Blend all vinaigrette ingredients in a blender about 15 seconds

and set aside.

 

Combine all salad ingredients in a large bowl. Toss lightly.

 

Add vinaigrette to salad. Toss to distribute evenly and coat thoroughly. Cover

and chill before serving.
