Sautéed Spinach

2 tablespoons olive oil or butter

1 garlic clove -- thinly sliced

1 large spinach bunch -- stems removed

leaves washed but not dried

Salt and freshly milled pepper

 

Serves 2 to 3

 

A dish in itself, this is also another basic way to cook spinach.

 

Heat the oil in a wide skillet with the garlic. Cook over medium-high heat

until the garlic turns light gold, then add the spinach, salt it lightly,

and cook until bright green and limp, just a few minutes. Move the leaves

around the pan, picking them up and turning them over as they cook. Season

with pepper and serve.

 

Spinach with Croutons: If your spinach eaters are wary of its silky

texture, toss buttered or sautéed spinach with small croutons sautéed in

olive oil or butter until crisp or simply crisped in the oven.

 

Spinach with Mushrooms: Or call it mushrooms with spinach - it's about

equal amounts of each and exquisite in either case. See separate recipe
